INTERNATIONAL HOTEL SCHOOL - CAREER DAY EXPERIENCE
The International Hotel School has been established for over 25 years by proving quality Hospitality and Culinary educational services ranking it one of the top 50 Hospitality Universities in the world. It is the only tertiary institution in South Africa offering programs recognized by the American Hotel and Lodging Educational Institute (AHLEI). The International Hotel School is a proud member of Sommet Education, the world’s leader in hospitality management education. It has three prestigious institutions: the hospitality business schools Glion Institute of Higher Education and Les Roches with culinary and pastry arts school École Ducasse.
The Hotel School accepted to host our aspiring young Chefs
at their facility to educate them on skills and knowledge to obtain to become
future Chef professionals. We were welcomed and hosted by Chef Keegan Brook who
is the Head of the Department for the Culinary Arts. She provided the learners
with an amazing “mouth-watering”, private Ice-cream class session
using dry ice. A mind-blowing culinary experience “When-Science-Meets-Culinary”.
Chef Keegan shared her industry experiences and life journey with the learners
in such a way that it was relatable and inspiring. She continued to advise the
learners about the expectations of academic performance, the opportunities offered
through enrolling in the institution and the growth of the industry.
The learners got the opportunity to engage with the Pastry students at the institution while they were competing in the Avo- Competition 2022 for the prize of R12 000. The competition featured anything that had an element of Avocado, testing the creativity of the student Chefs on how innovative they can be. The first Pastry student Chef the learners met was Goitsemang Sehalahala who was preparing her “Egg Benedicts” as a competition dish with deep-fried avocadoes with a beautiful golden-brown coating, Yum! 😊.
Johanette Van der Westhuizen was competing with her “Avocado Cream Puffs” dish, with some beautiful avocado pastry with a natural green coloring touch.
Masego Makole, is such a bright personality Chef competing with her “Avocado Tostadas” with shrimp dish.
Njongonkulu Matsolo showed us his competing dish a creamy “Avocado Panna cotta” dish that is to be served with lime curd and dehydrated berries. Oh! Boy, we so wished we had a chance to taste that.
Ivan David competed with a “Salt in cracker Avocado ball dish, filled with butter poached prawn with pomegranate caviar”.
These were absolutely exciting dishes and we wish all competition participating
student Chefs the best of luck.
